I loooove a good lava cake.

My husband loves it even more!

We have been together for a total of almost 14 years. Ever since we started dating, the man has always ordered chocolate cake with every meal at any restaurant.

When we worked together at a café, we sold delicious chocolate lava cakes. I remember once, a customer chose to eat around the centre, leaving the delicious chocolate lava-like centre on the plate.

I’ve never seen my husband so upset (just kidding – although, he could not understand for the life of him why someone would leave the lava part untouched).

A very long time ago, for our fourth or fifth Valentine’s Day, I decided made him a menu card as his gift.

On that menu card was a list of things that took me an entire day to prepare: buttery lobster biscuits, croquettes with chopped bacon, steamed crab, French Macarons, and his favourite – chocolate lava cake.

I really, really wanted to try to make a big, beautiful dinner. My mom is originally from Italy, and he has always raved about her food.

“Now is my chance to really impress him!” I thought.

Some things definitely turned out, while others needed work.

Overall, the chocolate lava cake was the easiest thing that I made that day, and definitely the most delicious! This chocolate lava cake recipe only needs a few ingredients that you probably already have in your pantry.

Luckily, I found that menu card in an old scrapbook recently, and decided to try and make it again for this year’s Valentine’s Day with our oldest son (especially since it was pretty quick and easy to make)!

I love making French Macarons, and thought about making chocolate lava flavoured ones – but maybe some day soon!

We ran out of time, and with two children, pouring these yummy ingredients into a crockpot was a lot easier for this busy Momma!

Side note: you will need just a few more ingredients than what I have listed – I left out things like eggs and oil because every cake mix is different!

Now, when making your chocolate pudding, use whatever milk or non-dairy milk option that you love. Just make sure you whisk the pudding mix enough before pouring it over your raw chocolate cake mix.

I have only ever used semi-sweet chocolate chips for the top, but I bet this recipe would also be delicious with dark chocolate chips!

This recipe is a fantastic way to get your kids involved in the kitchen! It was the perfect Valentine’s Day dessert for us, as I have a 7 month old and a toddler who nap at different times!

The best part about this cake (besides leaving it to cook and not worrying about it for 2 and a half hours) is that it tastes even better the next day!

We had a ton of leftovers since only the two of us ate it. I noted that this recipe serves 8, but quite honestly they are heaping servings. If you do pair it with ice cream you could probably have 10 servings in total.

Joey was too into his Valentine’s Day cookies, but loved sneaking in some chocolate chips earlier on in the day.

This pairs very well with vanilla ice cream of your choice – just make sure you let it sit for at least 15 minutes before serving! If you can wait 😉

Enjoy everyone!!
